When I am photographing a Baptism ceremony, I already know that I cannot use a flash since the popping light is too intrusive during the ceremony, so my camera settings are critical. I need to have a shutter speed fast enough to freeze the moment. This is usually 1/125 or faster depending on the speed of my lens. If my f stop opens up more, that is OK because a shallow depth of field will give me a bit more drama in the photo. Fortunately, with the Canon R8 I can crank up the ISO to 1000 and not be concerned about noise and click happily away.
